While I already have few Laushak recipe in my blog, suddenly realised that I donot have any chorchori recipe yet. Though Laushak is mostly cooked with poppy seed paste, because of the current surge in poppy seed price, I am always looking for alternatives. Then I came across this recipe of Dudh Diye Laushak Chorchori and immediately cooked it in my kitchen. The leaves I got was very tender and the chorchori turns out to be delicious.

Ingredients for Dudh Diye Laushak Chorchori
- Lau shak or bottlegourd greens – a bunch
- Brinjal – 1
- Pumpkin – 1 small wedge
- Milk – 1 cup
- Bori – 8-10
- Salt and turmeric – as required
- Sugar – 1/2 tsp
- Green chili – 4
- Kalonji seeds or kalo jire – 1/2 tsp
- Mustard oil for cooking
How to make Dudh Diye Laushak Chorchori
Wash the greens and take the leaves. Chop them. CUt the brinjal and the pumpkin into bite sized pieces.
Fry the bori in oil till it turns brown. Keep aside.
Heat some mustard oil and temper it with kalonji seeds and green chili.
Add the vegetables along with bottlegourd leaves. I have also added the tender stems. Sprinkle some salt and turmeric and cook with the lid on. Keep the heat on the lower side. Leaf will release water and get cooked in its own juice.
Once the greens are wilted stir a bit and again cook with the lid on.
Once the vegetable is completely cooked, add a cup of water. Stir.
At the verge of cooking, add the fried bori. It will soak the residual liquid in the dish. Mix well.
Adjust the seasoning and add the sugar. Give it a final stir and you are done.
Serve with steamed rice and dal.
