Amaranth or Notey Shak Bhaja

Got some very fresh Notey shak or Amaranth leaves in the market and decided to make Notey Shak Bhaja. The seller told me that this is known as Lokkhi Notey and tastes quite different form the regular Notey. I brought them home, cleaned them, washed thoroughly and then cooked them simply with some pumpkin. I have enhanced the taste and upgraded it to a few notches higher by adding some bhaja bori. These are small variety with some poppy seed and them give a nice taste and texture to the dish. We loved it and ate with plain rice. Nowadays, I am looking for that seller to get another bunch from him. It was that great.

Notey Shak Bhaja

Ingredients for Notey Shak Bhaja

  • Notey Shak – a bunch
  • Posto Bori – 2 tbsp
  • Pumpkin – a bowl
  • Salt and turmeric – as required
  • Kalonji seeds – 1/2 tsp
  • Dry red chili – 1
  • Onion – 1, small
  • Chopped Garlic – 1 tsp
  • Sugar – 1/2 tsp
  • Mustard oil for cooking

How to make Notey Shak Bhaja

Clean and wash the amaranth leaves thoroughly. I have taken them in a collander and wash them under running water.

Chop them roughly. Chop the pumpkin into small cubes.

Heat mustard oil in a pan. Fry the bori till golden brown. Remove from heat and keep aside.

In the same pan, add the dry red chili with a pinch of kalo jire or kalonji seeds.

Add the chopped garlic. Once then changes color, add chopped onion and fry a little.

Add the pumpkin cubes with the stems of the leaves. I have used the stems since they were very tender. Sprinkle some salt and turmeric and stir for 1 minutes.

Now add the chopped amaranth leaves and mix well.

Cook over low heat with the lid on till the vegetables are cooked through. Stir here and there to ensure even cooking.

Once the vegetables are cooked through. Add back the fried bori to the pan and mix again.

FInally adjust the seasoning and sprinkle the sugar. Remove from heat.

Serve with plain rice. You may add a dollop of Kasundi as a side while enjoying it with rice.
