Mangsho Bhaja or Mutton Fry

Made some Mangsho Bhaja or Mutton Fry last weekend. Actually, I had a small quantity of mutton in the fridge which may not be sufficient to be served as a main dish. So made this chotpota kind of snack idem which tastes great with some paratha. I am planning to make some mutton roll next time I cook this. It is extremely easy to make, not much of ingredients, but the taste quotient is very high.
I have very few snack items cooked with mutton except for some Chorbi r Bora or Mutton Fat Fritters. However, for a regular curry dish, there are plenty of mutton dishes in my blog. You can try them as per your likings and let me know your feedback.

Mangsho Bhaja or Mutton Fry

Ingredients for Mangsho Bhaja or Mutton Fry

  • Mutton – 500 gms
  • Potato – 1, optional
  • Onion – 2
  • Ginger paste – 1 tbsp
  • Garlic paste – 1 tsp
  • Bayleaf – 2
  • Whole garam masala – Cloves, Cardamom, Cinnamon for tempering
  • Dry red chili – 2
  • Green chili – 5-6
  • Red chili powder – 1 tsp
  • Kashmiri chili powder – 1 tsp
  • White oil for cooking
  • Salt and Sugar – as required
  • Garam masala powder – a pinch

How to make Mangsho Bhaja or Mutton Fry

In a pressure cooker, heat 1 tbsp of oil. Then temper the oil with bayleaf and whole garam masala. Then add 1 chopped onion and fry a little.

Add the ginger garlic paste and with a sprinkle of water, fry this for a minute,

Cut the mutton into small bite sized pieces. Fry it with the masala a little.

Then add a cup of water and pressure cook the mutton for 3-4 whistle.

Heat some more oil in a pan. Then temper it with bayleaf, dry red chili and whole garam masala.

Add cubed potato and fry a little.

Immediately add the other onion, which I have chopped into bigger pieces.

Add the boiled mutton after straining the residual juices, if any, to the pan. Reserve the liquid.

Sprinkle salt, red chili powder and kashmiri chili powder and mix well.

Continue cooking over low heat till the oil separates from the mutton.

Now , add the residual juices reserved earlier to the pan.

Cook till the gravy reduced completely.

Sprinkle salt and sugar as required and also add the green chili.

Sprinkle garam masala powder and remove from heat. Keep covered for 15 minutes.

Serve hot.
