Kaju Patol or Parwal in Cashew Gravy

This is that time of the year when I am fed up of cooking patol or parwal every week. Be it a Patol Posto or Poppy Seed paste or Peyaj diye Patol Bata or even a mixed vegetable like Patol Dhyarosh er Torkari, sometimes I just feel like revolting of cooking patol continuously. Again I pacify myself and search the net for something different to cook and last week found this Kaju Patol or Parwal in Cashew Gravy recipe. It was really good and a welcome change to the otherwise mandane dish. I think it will taste great with some bengali style luchi also.

Kaju Patol or Parwal in Cashew Gravy

Ingredients for Kaju Patol or Parwal in Cashew Gravy

  • Patol or Parwal – 500 gms
  • Cashew – 1 tbsp
  • Curd – 1 tbsp
  • Green chili – 5-6
  • Ginger paste – 1 tsp
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tsp
  • Kashmiri chili powder – 1/2 tsp
  • Salt and turmeric – as required
  • Sugar – 1 tsp
  • Cumin seeds – 1/2 tsp
  • Bay leaf – 2
  • Dry red chili – 2
  • Whole garam masala – cinnamon, cardamom and cloves – for tempering
  • Mustard oil for cooking

How to make Kaju Patol or Parwal in Cashew Gravy

Make a paste of salt, cumin powder, coriander powder, turmeric powder, kashmiri chili powder and ginger paste along with some water. Keep aside.

Soak the cashew nut in water for 15 minutes. Then grind it with green chili and curd . Make a paste and keep aside.

Heat oil in a pan, Peel and cut the patol into half and then fry them with a pinch of salt and turmeric. Keep aside.

In the same pan, add some more oil if required. Then temper the oil with cumin seeds, dry red chili , bay leaf and whole garam masala.

Add the masala mixture prepared 1st and fry till oil starts coming out of the masala.

Next goes the cashew, curd and green chili paste. Fry well till oil starts coming out of the masala.

Add a cup of water and once it starts boiling, add the fried parwal back to the pan. Mix well with the masala.

Cook covered till the vegetable is well cooked. Adjust the seasoning and add the sugar.

Serve with plain rice or roti or paratha.
