We have a big moringa tree in front of our building and this season the we got plenty of moringa leaves and fruits from the same tree. After distributing it to other tenants, I got few sticks and planned to make a typical bengali Sojne Data diye Sukto. Now, this sukto is an emotion for us bengalis, so much so, that , in bengal, you will be treated as a true bengali chef if you can make an authentic sukto. You can cook Sukto in numerous ways. May be you combine it with some ridge gourd and make Jhinge Bori Sukto | Jhinge Bori Shukto. You may use some raw papaya and raw banana to make Pepe kachkola bori diye sukto. The combination can be endless.
Ingredients for Sojne Data diye Sukto
- Moringa fruit or sojne data – 2
- Brinjal – 1
- Jhinge or ridgegourd – 1
- Green banana – 1
- Ranga aloo or sweet potato – 1
- Parwal – 2-3
- Uchchhe or bittergourd – 3-4
- Bori – 10
- Radhuni – 1/2 tsp
- Bayleaf – 2-3
- Mustard and Poppy seed paste – 1 tbsp
- Salt and sugar- as required
- Oil for cooking
- Ghee – 2 tsp
How to make Sojne Data diye Sukto
Wash all the veggies and arrange them. Soak the poppy seed in water for 15 minutes and grind it to a paste.
Cut the veggies as shown here.
Heat oil in a pan and dry the bori till golden brown. Keep aside.
Fry the brinjal with a pinch of salt. Keep aside.
Fry the bittergourd as well. Keep aside.
In the same pan , heat some more oil and then add the radhuni as tempering. Mix 1 tsp of ghee at this stage.
Add the bayleaf .
When you get the nice aroma, add all the veggies except brinjal and botter gourd. Fry them a little and then cook covered over low heat.
When veggies soften, pour the poppy seed paste along with some water. Mix and continue cooking.
Stir occasionally. Veggies will release water and get cooked in their own juices.
When veggies are almost cooked, add fried brinjal and bitter gourd. Mix and xook for 2 morw minutes.
Finally add the fried bori and cook for 2 more minutes. Bori will soak some water.
You are almost done. Adjust the seasoning and add sugar.
Finally, add the remaining ghee and stir. Remove from heat.
Keep covered in standing time of 30 minutes. Serve with plain rice.
