Nowadays, what is happening at the work front is a madness for various reasons. I have no time to comb my hair sometimes, just coming back from office for some sleep and again going there. Obviously the kitchen front has taken a backseat and somehow we are surviving with the bare minimum food. I am blindly relying on various bati chorchori recipe to cook something in a jiffy and this Laushak er Bati Chorchori is one of them. By the way, I love laushak in any form and specially the bharta is a dear recipe for me. If I have time I indulge in some laushak posto bharta to enjoy with my rice.
Ingredients for Laushak er Bati Chorchori
- Laushak – 2 bunches
- Bori or bengali lentil balls – a small bow
- Carrot – 2
- Brinjal – 1, chopped
- Tomato – 1
- Salt and turmeric – as required
- Mustard oil for cooking
- Sugar – 1/2 tsp
- Green chili – 4
How to make Laushak er Bati Chorchori
Wash and clean the shak. Check each leaf from both sides to ensure there is no creature hiding there. Wash again and chop them.
Peel and chop the carrot. Cut the brinjal into big chunks. Chop the tomatoes and green chili.
Heat oil in a pan and fry the bori till brown. Keep aside.
In a pan, take all chopped vegetables. Sprinkle some salt and turmeric at the top. Include tomato and green chili too.
Add half cup of water and put the pan on low flame. Pour 1 tbsp of mustard oil on top. Cook covered. Vegetables will release lot of water and everything will get cooked in their own juices. When the veggies are cooked through, stir a bit and add fried bori. Mix well and cook for 2 more minutes.
Adjust salt and add some sugar. Gove it a final stir and remove from heat. Pour one more tbsp of oil at the end. You are done. Serve with rice or roti.
