Jhinge is such a versatile vegetable that it is one of my favorite veggie after Patol or parwal. I love jhinge in many form and have a lot of recipe on this. You may try out some Dal with jhinge, or combine it with some pumpkin to make a dry curry, or even cook it with some mustard paste. Even after trying with all these combinations, I have never tried jhinge or ridgegourd with til or sesame seed before.
My jhinge or ridge gourd affair is mostly with posto or poppy seeds. Now a days, posto became so pricy that I had to take some alternative and til or sesame seed has come up as a solution. So while cooking jhinge today, I have decided to add some til bata or sesame seed paste to the dish and Jhinge Tilottoma is born. We really liked the taste of this dish, though it will not be able to beat our all time favorite jhinge Aloo posto.
Just to add a few words here, I have not used any turmeric powder in this recipe. I am not satisfied with the appearance of the dish and planning to cook it again in near future with right dose of turmeric powder. Please be with me and keep visiting the site to get the update.
Ingredients for Jhinge Tilottoma
- Jhinge or ridge gourd – 1 kg
- Panchforan – 1 tsp
- Green chili – 4
- Onion – 1, chopped
- Garlic paste – 1 tsp
- Til or sesame seed – 1 tbsp
- Salt and sugar – as per taste
- Oil for cooking
How to make Jhinge Tilottoma
Peel and cut the ridge gourd into cubes. Heat oil in a pan and add panchforan and green chili to the oil.
Add the chopped onion and fry a little.
Next goes the garlic paste. Fry for a minute.
Now add the cubed ridge gourd with a pinch of salt. Mix well with the masala.
Stir a little and then cook with the lid on for 10 minutes. Cook over low heat so that the vegetable releases water nd gets cooked in its own juice.
In the mean time, soak the sesame seed i water for 15 minutes and then grind it with the remaining chili into a fine paste. Add the sesame seed paste to the pan.
Stir well and cook again for 5 more minutes till the vegetables are cooked through and mixed well with the sesame seeds. Adjust the seasoning and sprinkle the sugar.
Serve hot with plain rice.
