Mugdal diye Aloo Patol er Dalna

Was kind of bore with a regular patol recipe hence tried it with some mug dal. This is otherwise a basic recipe of aloo patol er dalna, the difference is the gravy has been thickened with some dry roasted and cooked mugdal. I am planning to add some kishmish or raisin next time I cook Mugdal diye Aloo Patol er Dalna. This is kind of a new taste for me, since I have used Mugdal while cooking bottle gourd. For Patol, I restrict myself to cook it with some gobindabhog rice but never with any dal. Saw the recipe in a bengali food group and hence gave it a try. The output is not bad. However, next time, I will cook the dal for lesser time so that the dal is visible in the dish.

Ingredients for Mugdal diye Aloo Patol er Dalna

  • Patol or parwal – 10
  • Potato – 2
  • Mug dal – 1 tbsp
  • Salt and turmeric- as required
  • Bayleaf – 2
  • Cumin seeds – 1/2 tsp
  • Cinnamon- 1/2 inch
  • Dry red chili – 2
  • Ginger paste – 2 tsp
  • Cumin powder – 1 tap
  • Green chili – 4-5
  • Tomato – 1 , chopped
  • Sugar – 1 tsp
  • White oil for frying the vegetables and cooking
  • Ghee – 1 tsp
  • Cream – 1 tbsp

How to make Mugdal diye Aloo Patol er Dalna

Heat white oil in a pan and fey the potatoes till golden brown. Keep aside.

Peel and cut the parwal into half. Dry them with a pinch of salt in the same oil. Keep aside.

In the same pan, add bayleaf, dey red chili, cumin seeds and cinnamon.

Next goes chopped tomatoes. Cook till the tomato is mashed.

Next add the ginger paste, cumin powder and green chili. Fry till oil separates.

With a sprinkle of water, add salt and turmeric and fry the masala.

I have already dry roasted the dal and soaked it in water for 30 minutes. Add it at this stage.Cook for 5 minutes.

Next step is to add the froed vegetables to the pan. Mix well to coat with the masala.

Add a cup of hot water and cook till the vegetable and dal is cooked through.

.Adjust the seasoning and add the cream. Sprinkle sugar as well.

Finally add the ghee and remove from heat. Serve as a side dish.
