Chingri Machher Dhoka r Dalna

Ok, so this Chingri Machher Dhoka r Dalna recipe is an elaborate one for which you need time and patience. Traditionally, a dhoka is made up of chana dal paste. We steam it , fry and finally make into a gravy without onion or garlic. After steaming the chana dal paste, I cut it into diamond shaped block. Now, you may add various other ingredients to the paste before making dhoka.

Though for this dish, I didn’t use any chana dal. Instead, I made the dhoka with the flesh from the prawns. I steam the prawn paste in a microwave after adding various spices. Then I cut it in the form of dhoka and then I fry it till golden brown. Now, you may serve it as a snack at this point itself, the way I did it here. However, I took extra pain to make some gravy and dunked the dhoka bhaja into the gravy to make a dalna. Once you complete the cooking, you will feel that it is finger licking good.

Ingredients for Chingri Machher Dhoka r Dalna

  • Prawns – cleaned, peeled and deveined – 400 gms
  • Green chili – 6
  • Egg – 1
  • Salt and Turmeric powder – as required
  • Potato – 2
  • Green peas – a small bowl
  • Onion – 2
  • Ginger paste – 1 tbsp
  • Garlic paste – 1 tsp
  • Curd – 2 tbsp
  • Coriander powder – 1 tbsp
  • Red chili powder – 1 tsp
  • Tomato – 1
  • Bayleaf, cumin seeds and whole garam masala for tempering
  • Sugar – 1 tsp
  • Kashmiri chili powder – 1 tsp
  • Oil for cooking
  • Ghee – 1 tsp
  • Garam Masala powder – 1/2 tsp

How to make Chingri Machher Dhoka r Dalna

In a mixer grinder, make a paste of cleaned, peeled and deveined prawns. The paste may not be a smooth one.

Add the green chili paste as well.

Now, sprinkle some salt and an egg to the mixture. Add a spoonful of oil and mix every thing evenly.

In a microwave save bowl ( with a flat surface) spread the mixture evenly so that the thickness is same everywhere.

Steam them in the microwave for 5 minutes over full power. I keep a small bowl of water inside the microwave to ensure that the mixture is not getting dry. Take it out from the microwave and once it is cool down, cut them in blocks. These are your dhoka.

Heat oil in a pan and fry the dhoka in batches till golden brown.

While you are frying the dhoka, make a paste of onion, tomato and green chili. Peel the potatoes and cut them into cubes.

Fry the potatoes with a sprinkle of salt and turmeric till golden brown.

In the same pan, add the bayleaf, whole garam masala and cumin seeds for tempering.

Now, add the masala paste prepared earlier. With a pinch of salt and sugar, fry the masala.

In the mean time, mix the curd with salt, turmeric, coriander powder, red chili powder and kashmiri chili powder. Add little bit of water and make a paste.

When the onion mixture is fried well, add the ginger and garlic paste. Mix again and fry till the raw smell is gone.

Now is the time to pour the masala mix. Do it over low heat to avoid burning of the masala.

When oil starts oozing out, add the fried potatoes. Mix well and cook for 2-3 minutes.

Now add 2 cups of hot water. Let it start boiling.

Add the green peas and cook for 5-6 minutes till the potatoes are almost cooked through.

Now add the fried dhoka into the gravy and cook for 3 minutes. Dhoka will absorb water so adjust the gravy accordingly.

FInally, adjust the seasoning and add the sugar. Add a spoonful of ghee too. Mix well.

Sprinkle some garam masala powder and keep covered for a standing time of 15 minutes. Serve with rice or pulao.
