Bhindi Baigan Masala

By now, you already aware that I hate bhindi or okra or ladies finger. So, as soon as it comes to cook okra, I have all the reason to find out the excuses not to cook it. When it is completely inevitable, I need to cook this quick recipe of Bhindi Baigan Masala, which doesnot take much time and tastes good to some extent. You need to fry the vegetables separately and then fry the masala. Once you get the nice aroma, return back the veggies to the pan and do a quick stir fry.

Bhindi Baigan Masala

Ingredients for Bhindi Baigan Masala

  • Bhindi or Okra – 300 gms
  • Baigan or Brinjal – 1
  • Onion – 1 , chopped
  • Garlic paste – 1 tbsp
  • Green chili – 5-6
  • Salt, turmeric and kashmiri chili powder – as required
  • Sugar – 1/2 tsp
  • Mustard oil for cooking

How to make Bhindi Baigan Masala

Cut the end point of the okra and then slice them into half. For smaller ones, you can keep them whole. Cut the brinjal into big chunks.

Heat oil in a pan and fry the okra with a aprinkle of salt. Fry almost done and keep aside.

In the same pan, add the brinjal pieces and fry till it changes color. Keep aside.

In the same pan, add some more oil if required. Then add the garlic paste and fry a little. Next add the chopped onion and chopped green chili. Fry till the onion is crispy.

Fry the masala along with salt, turmeric and kashmiri chili powder. Sprinkle some water and fry till fragrant.

Add half cup of water and let it boil.

Now return the fried okra to the pan and mix well with the masala. Cook for 3 minutes.

Return back the fried brinjal and mix well. Cook covered for two more minutes so that the veggies are well cooked but not mushy.

Sprinkle some sugar at this point. Not much, just a sprinkle to balance the taste.

Adjust the seasoning and remove from heat.

Goes wel with roti or paratha.
