Saw one video of making of bun dosa or masala stuffed dosa on the net and decided to give it a try. Hubby doesnot like dosa , so I hardly make it for myself. However, after watching the video, decided to make it for myself only to pamper my soul. Took all the effort to make every nitty gritty from scratch and the breakfast of that weekend was a pleasure.
Ingredients for Masala Stuffed Dosa
- Potato – 2, boiled and mashed
- Pumpkin – 1 small bow
- White oil – as required
- Mustard seeds – 1 tsp
- Jira or cumin seeds – 1/2 tsp
- Hing – a pinch
- Green chili – 1
- Green peas – 2 tbsp
- Corn carnel – 1 tbsp
- Onion – 1, chopped
- Ginger paste – 1 tsp
- Suji or semolina – 1/2 cup
- Chira or flattened rice – 1/2 cup
- Rice flour – 1 tbsp
- Curd – 1/4 cup
- Salt and turmeric – as required
- Baking soda – a pinch
- White oil for cooking
How to make Masala Stuffed Dosa
To make the stuffing, heat some oil in a pan. Then temper the oil with mustard seeds, cumin seeds and hing.
Add chopped onion and green chili and fry a little.
Next goes the pumpkin, green pras and corn. You may use carrot also. I didn’t have carrot hence replaced it with pimpkin.
Cook with a pinch of salt and turmeric till done. Add the ginger paste in between.
Break the boiled tatoes to make it semi mashed and add it to the pan. Mix well.
Adjust the seasoning and remove from heat. Let it get cooled completely.
To make the dosa batter, I have used equal wuantity of semolina and flattened rice or chira as we call it. Ground them to a fine powder using a mixie and then transfer to a bowl.
Add the rice flour and mix well.
Then pour the curd and some water to the mixture and stir well to incorporate everything together. There must not be any lump in the batter.
Rest the batter for atleast 15 minutes and then stir again to get a smooth batter. Adjust the water as required.
Now is the time to make the dosa, keep every thing handy and heat a small pan. I have used my appe pan since I didn’t have any small flat pan.
Add a pinch of baking soda to the batter. Place a laddle of batter to the hot pan.
Keep the heat low. Make a small ball of veggies and place it over the batter.
Now place another laddle of batter onto it to cover it fully. Add a little amount of oil around and cook over low heat.
When one side is done, carefully flip it to cook the other side. Cook till it crisp and browned evenly.
You may use ghee to fry dosa as well. Enjoy soft, juicy bun dosa with your favorite chutney.
