I don’t know what Kakur is called in english. Not a very common veggie , it belongs to the gourd family I think. During weekends, when I venture out to the market, I try to notice and capture at least one exotic item to cook for the next week. And for that, I look at the people sitting outside the market with some little portion of this and that, sometimes some kochu shak, or some dumur or polta pata. So , last week, I found this vegetable , Kakur, in one of the bucket. The seller , a very humble lady, told me that it is kakur and you can cook it in the form of a dalna. So, decided to cook it with some prawn and made Chingri diye Kakur er Dalna. A welcome change of mundane summer vegetable, I must say.
By the way, I have used onion while cooking this, You may make it a complete vegetable dish by discarding the onion and prawn.
Ingredients for Chingri diye Kakur er Dalna
- Kakur – 1, approx 1 kg
- Potato – 2-3
- Prawns – 12-14
- Onion – 1
- Ginger paste – 1 tbsp
- Cumin powder – 1 tsp
- Coriander powder – 1 tsp
- Salt and turmeric – as required
- Green chili – 6
- Kalonji seeds – 1/2 tsp
- Oil for cooking
- Ghee – 1 tsp
How to make Chingri diye Kakur er Dalna
This is how the kakur looks like. I peeled it and then cut into small cubes. Also, pee the potatoes and cut into cubes.
In a cup, take the ginger paste, salt, turmeric, cumin and coriandwr powder. Add a little water and make a paste. Keep aside.
Heat oil in a pan and fry the prawns with a pinch of salt and turmeric. Keep aside.
In the same pan, add the kalonji seeds and slit green chili. Let it splutter.
Add chopped onion and fry till it changes color.
Next add the masala paste prepared earlier. Mix well.
When oil starts coming out of the masala, add the potato cubes. Mix to coat evenly and cook for a minute
Now add the kakur cubes.
Mix well so that all the vegetables are well coated with masala.
Now cook with a lid on on a low flame. Coom for 10 minutes. Vegetables will release water and will get cooked in its own juice.
When veggies are almost cooked, add the fried prawns. Fold carefully.
Add half cup of hoy water and cook for 5 minutes.
Adjust the seasoning and remove from heat. Add a spoonful of ghee at the end. Serve hot with rice.
