Aloo Kumro diye Chingri | Prawn cooking with potato and Pumpkin

Sometimes it strikes me hard that I haven’t written some very basic recipes in my blog though I cook them very often. This Aloo Kumro diye Chingri or Prawn cooked with potato and Pumpkin is one such dish.. Sometimes, I boil the vegetable before hand and can make this dish in a jiffy. I make a quick meal on a regular basis in my household and this is good for packed lunch too. Your prawns should be shelled in that case, when you are serving it as part of your packed lunch. In Bengali, we call this kind of dish as Dalna and I have a similar recipe where Prawn is cooked with potato and parwal. You can make it the vegetarian way and make Kumro Patol er Dalna.

Aloo Kumro diye Chingri

Ingredients for Aloo Kumro diye Chingri

  • Prawn – 10 -12
  • Potato – 2
  • Pumpkin – 1 wedge
  • Onion – 2, chopped
  • Ginger paste – 1 tsp
  • Cumin Powder – 1 tsp
  • Kashmiri chili powder – 1 tsp
  • Red chili powder – 1/2 tsp
  • Salt and turmeric – as required
  • Sugar – 1/2 tsp
  • Bayleaf and cumin seeds for tempering
  • Mustard oil for cooking

How to make Aloo Kumro diye Chingri

Fry the prawns with a pinch of salt and turmeric. Keep aside.

Add some more mustard oil in the pan and when it is hot, add bayleaf and cumin seeds. Let it splutter. Then add chopped onion and fry till it starts changing the color.

Now add the ginger paste and fry well till the raw smell is gone.

Add chopped vegetable. Sprinkle some salt and turmeric and fry well.

Add chili powder and kashmiri chili powder along with cumin powder. Sprinkle some water and fry the masala along with vegetables.

Fry till oil starts coming out of the masala.

Add 1 cup of hot water to the vegetable. Once it starts boiling and vegetables are almost cooked, add the fried prawns. Mix well.

Adjust the seasoning. When vegetables are fully cooked, sprinkle the sugar and stir once or twice.

Remove from heat and serve.
