Now a days, it is a sin to have this kind of fried dish specially when the main ingredients of mutton fat. During our childhood, if it is a festival like bhaifota , we used to have is as a side dish. I hardly make it now, but when I do, I make in small quantity and enjoy it to the fullest. Sometimes I add some dal bata to it as well to make an elaborate version of Chorbi r Bora. However, this version is a pure play fat fritters with lots of chili. Try it once in a while to console your soul, may be.
Ingredients for Chorbi r Bora
- Mutton fat – 100 gm
- Onion – 2, chopped finely
- Ginger paste – 1 tbsp
- Garlic, chopped – 1 tsp
- Salt and turmeric – as required
- Green chili – 2 tbsp, chopped
- Coriander leaves -a bunch, chopped
- Gram flour or besan – 1 tbsp
- Rice flour – 1 tbsp
- White oil for frying
How to make Chorbi r Bora
Cut the solid fat into bite size pieces. Add the onion, chopped green chili, salt, turmeric , ginger paste and chopped garlic to it.
Marinate it for 30 minutes minimum.
After 30 minutes sprinkle thw rice flour and gram flour onto it. Using a spoon, mix well so that each piece is well coted with masala and flour. Sprinkle water if required.
When ready to fry, first add lots of chopped coriander leaves. Mix again.
The mixture should be a toght one and the fat pieces should be lightly coated with all. If require, adjust the amount of gram flour.
Finally mash everything using your hand and five it a massage.
Make small balls and keep aside.
Heat oil in a pan amd place the fritters carefully into the hot oil.
Fry till golden brown from all sides.
Do it in batches and donot overcrowd the pan. Serve hot.
