Chal diye Kachkolar Torkari

The name, Chal diye Kachkolar Torkari is a bit confusing and though I have seen this recipe multiple times, never thought of making it before. Cooked various vegetable with aromatic gobindabhog rice like parwal or cauliflower. Never thought of cooking raw banana this way. Came to know about cooking it with raw banana in one of my cook book collection and it is absolutely fabulous. I would request you all to try it now and let me know how it goes.

Ingredients for Chal diye Kachkolar Torkari

  • Raw banana – 3
  • Potato-1
  • Aromatic rice – 2 tbsp
  • Fenugreek seeds – a pinch
  • Salt and turmeric – as required
  • Bayleaf – 2
  • Whole garam masala-2 green cardamom, 1 inch cinnamon, few cloves
  • Ginger paste – 1 tbsp
  • Cumin powder – 1 tsp
  • Kashmiri chili powder – 1 tsp
  • Green chili – 3-4
  • Kishmish or raisin – few
  • Sugar – 1 tsp
  • Ghee – 1 tsp
  • White oil for cooking

How to make Chal diye Kachkolar Torkari

Peel the raw banana and potato. Cut them into cubes and soak them in water . Add a pinch of turmeric in the water to avoid coloration of the banana. Soak the rice in water.

Fry the banana and potato in batches with a pinch of salt and turmeric. Keep aside.

In the same pan, add some methi or fenugreek seeds.

Now, temper the oil with bayleaf and whole garam masala.

Add the soaked rice and fry quickly. Rice will change color.

Add salt, turmeric, ginger paste and kashmiri chili powder. Sprinkle the cumin powder too. Alternately, you can mix all the masala with a little water to form a paste and add. Whichever is the way, mix well.

Fry the masala with rice well. Sprinkle aome water to avoid burning.

Return back the fried potatoes first to the pan. Mix well with masala.

Pour a cup of hot water to the pan. Stir to mix well.

Once it starts boiling, add the fried banana.

Cook for 6-7 minutes till the vegetables are cooked along with rice. The dish would be on the drier side and when the rice is cooked throuhh it will absorb most the of water.

Adjust the seasoning and sprinkle a pinch of sugar. You may add some raisin too. Finally add few green chilies and cook for 1 more minute.

Add a spoonful of ghee at the end and remove from heat.

Serve with roti or luchi.
