Chholar Dal diye Lau Ghonto

I have cooked lau ghonto in multiple ways, be it with bori and fresh peas or with fish head. There is an epic recipe of Lau or bottlegourd cooked with mugdal and prawn, which is a repeat almost every week in my family during the lau season. This time, instead of mug dal, I have used chana dal to cook this Chholar Dal diye Lau Ghonto and I am pleasantly surprised with the taste. The crunchiness of the chana dal gave the dish a nice texture. Laced with ghee, this dish is a must on a meatless day.

Ingredients for Chholar Dal diye Lau Ghonto

  • Lau or Bottle gourd – 1/2 piece
  • Chholar dal or Chana Dal – 2 tbsp
  • Fresh peas – 1/2 cup
  • Ginger paste – 1 tbsp
  • Green Chili – 4
  • Gobindabhog rice – 2 tsp
  • Salt and turmeric – as required
  • Dry red chili and Fenugreek seeds – for tempering
  • Sugar – 1 tsp
  • Ghee – 1 tsp
  • White oil for cooking
  • Coriander leaves – 1 sprig

How to make Chholar Dal diye Lau Ghonto

Soak the chana dal and gobindabhog rice for a minimum 30 minutes. Heat oil in a pan and add methi or fenugreek seed and dry red chili .

When the chili start changing color, add the chopped bottle gourd. Sprinkle some salt and turmeric and stir well.

Add the soaked chana dal to the pan and mix. Now reduce the heat and keep cooking with the lid on. Bottlegourd will release lot of water and it will get cooked in its own juice.

After 10-15 minutes , remove the lid and check the doneness of dal and vegetable.

While the veggies are getting cooked, grind the ginger, soaked rice and green chili .

When the veggies and chana dal is almost cooked, add the gresh peas and mix well.

Add the ground masala to the pan now. Stir well and increase the heat.

Stir well till the vegetable is completely cooked and water is absorbed completely.

Adjust the seasoning and add chopped coriander leaves.

I always add a spoonful of ghee at the end of cooking bottle gourd specially when I am cooking it with methi.

Keep 15 minutes standing time and then serve with rice or roti.
