Kumro Dhyarosh Chechki

This sweet and sour Kumro Dhyarosh Chechki is something which I like when we get fresh dhyarosh or ladies finger or okra in the market. Hubby loves ladies finger and I dislike it , so when I am cooking it only for two of us, I have to make something which helps both of us. I have used curd to impart the sour taste to the chhechki, you may add some tamarind paste instead of curd to make it more tangy.

Kumro Dhyarosh Chechki

Ingredients for Kumro Dhyarosh Chechki

  • Kumro or pumpkin – 1 wedge
  • dhyarosh or ladies finger – 10-12
  • Curd – 2 tbsp
  • Mustard paste – 1 tbsp
  • Green chili – 4-5
  • Salt and turmeric – as per taste
  • Kashmiri chili powder – 1/2 tsp
  • Sugar – 1/2 tsp
  • Methi – a pinch
  • Mustard oil for cooking

How to make Kumro Dhyarosh Chechki

Heat mustard oil in a pan and temper the oil with methi or fenugreek seeds.

Once the methi turns black, add cubed pumpkin and ladies finger. I always soak the ladies finger or okra in water for 30 minutes. Cut them into 3 pieces after discarding the tip from both ends. Sprinkle some salt, turmeric and kashmiri chili powder.

Fry for 2 minutes over high heat and then lower the temperature Nd xook covered till the vegetable is soft.

Grind the mustard seeds with green chili and curd. Add this masala to the pan. Stir well.

Now cook for 5 more minutes and adjust thr salt and sugar as per taste.

Serve with roti or paratha.
