Boiled Egg and Potato Bhurji

My love for bharta is going beyond my control. Whatever I am cooking now a days, I am thinking of turning it into a bharta. Or wait, can I term it as a boiled egg bhurji? Why not, it has eggs, it has potato and also it has masala, and ultimately it is yum and delicious. Now a days, I am making this Boiled Egg and Potato Bhurji frequently for our lunch box.

Boiled Egg and Potato Bhurji

Ingredients for Boiled Egg and Potato Bhurji

  • Eggs – 3
  • Potato – 2
  • Onion – 1
  • Garlic – 5-6 cloves
  • Ginger paste – 1 tsp
  • Green chili – 5-6
  • Tomato – 1, chopped
  • Salt, turmeric – as required
  • Cumin and coriander powder – 1/2 tsp each
  • Red chili powder – 1/2 tsp
  • Butter – 1 cube
  • White oil for cooking

How to make Boiled Egg and Potato Bhurji

Pressure cook the eggs and potatoes. Peel and roughly mash using a fork. Don’t mash it completely.

Heat oil in a pan and add the butter too.

Add chopped onion and fry till it changes color.

Add the ginger paste, garlic bits and chopped green chili. Continue frying.

Now is the time to add the chopped tpmatoes. Fry till the tomatoes are mushy.

Add salt, turmeric, cumin and coriander powder and red chili powder. With a splash of water, fry them well till oil separates.

Pour half cup of water at this stage. Your masala is ready.

Now it is the turn of mashed potato and eggs. Stir to combine it with the masala.

Fry for two minutes and then sprinkle aome garam masala powder.

Adjust the seasoning and remove from heat. Donot forget to add plenty of chopped corianders.

Serve with roti. Can be used as a filling of sandwich as well
