Some Palong Shak Bhaja or stir fried greens are here for you. When it comes to cooking greens , bengalis have their various ways to cook it so that it becomes enjoyable. The famous preparations are like chhyanchra or ghonto. But sometimes we eat shak bhaja too, and while frying the greens, we add various other titbits to it. Brinjal is a very common ingredient to any kind of shak bhaja. We also add bori to it and sometimes ground nut too. For this Palong Shak Bhaja recipe, I have used some brinjal and just before removing it from heat, I have added a spoonful of ginger paste to it. I have used some rice paste to it to give it a thick and shiny look. You may try and let me know, if you like it.
Ingredients for Palong Shak Bhaja
- Palong shak or spinach -1 bunch
- Brinjal – 1
- Ginger paste – 1 tsp
- Rice powder – 2 tsp
- Dry red chili – 1
- Salt and turmeric – as required
- Mustard oil for cooking
How to make Palong Shak Bhaja
Cut the brinjal into small cubes. Fry them with a pinch of salt and turmeric till golden brown and keep aside.
In the same pan, add some mustard oil and then add the dry red chili. Fry till it changes color.
Next goes the spinach with pinch of salt and turmeric.
Cook till the spinach softens and releases water. Increase the heat and cook till the water evaporates. Then add the fried brinjal and mix well.
After then add the ginger paste. Mix tge rice flour with 2 tsp of water and pour it to the pan.
Stir again for 2 minutes and adjust the seasoning.
Seeve with dal and rice.
