One of my comfort food is this Bori bhaja diye Dim Aloo Makha. You give me this any day and I would be happy. I have another version of this bharta in my blog and this one is a bit different. I have added some fried musur dal er bori to this bharta to give it some extra crunch. However, instead of adding raw onion, I have fried my onion a bit since I donot like the raw onion smell in my mouth. You can add raw onion too. Also instead of heating the mustard oil, you can add it raw. That will give you some extra punch.
In Bengal, we are more used to the term makha instead of bharta. You may get aloo makha, kumro makha or patol makha in a lunch menu. We also have a bori makha recipe as well. Another interesting term is bhate and sometimes this makha and bhate are being used as an alternative to each other.
Ingredients for Bori bhaja diye Dim Aloo Makha
- Potato – 1, big
- Egg – 1
- Onion – 1
- Garlic cloves – 4-5
- Dried red chili – 2
- Salt – as per taste
- Musur dal bori – a handful
- Mustard oil for cooking
How to make Bori bhaja diye Dim Aloo Makha
Fry the bori in mustard oil till it changes color. Keep aside.
Pressure cook the potato and egg. Peel it once it is cool down.
Mash the potato. Chop the onion and garlic.
Mash the egg as well and mix with potato. Add salt as necessary.
Heat some mustard oil and fry the dried red chili. I have used some curd chili here. You may use a regular dry red chili. Remive the chili and then add the chopped onion and garlic. Fry for a minutes maximum.
Add the fried chili, onion, garlic along with the oil to the egg potato mash. Mix well.
Finally add the fried bori and mix it thoroughly. Adjust the salt.
Serve with rice and dal. I have served it with panta bhat though.
