As stated earlier also, we bengalis hardly throw away any part of most of the vegetables. This FulKopi Data Chorchori is the example of one such part of most famous cauliflower or ful Kopi. Ful Koli Data or cauliflower stem usually being thrown away when they are hard or too matured. However, whenever I find some fresh cauliflower in the market, I first check for its stems. If it is fresh, new, and tender, I make use of it in the form of Chorchori or mishmash. I always add few bori or bengali sun dried lentil balls to the chorchori to give it a distinctive feature. It is finger licking good and you can have a plateful of rice only with it.
Ingredients for FulKopi Data Chorchori
- Tender stems from two cauliflowers
- Brinjal – 1/2
- Pumpkin – 1 wedge
- Sweet potato – 2
- Bori or Dried lentil ball – 14-16
- Green chili – 5-6
- Fenugreek seeds – 1/2 tsp
- Bay leaf – 2
- Ginger paste – 1 and half tbsp
- Cumin powder – 1 tbsp
- Salt and turmeric – as required
- Oil for cooking
- Coriander leaves for garnishing
How to make FulKopi Data Chorchori
Mix ginger paste and cumin powder in half cup of water. Soak it for 10 minutes. Clean the cauliflower stem and slice them lengthwise. Take the tender cauliflower leaves as well. Wash them thoroughly and them steam them for 5 minutes. Keep aside.
Slice the other vegetables like pumkin, sweet potato and brinjal lengthwise and keep aside.
Heat oil in a pan and when it is hot, fry the bori till golden brown.
Remove from heat and soak them in half cup of water.
In the same pan, heat some more oil and add fenugreek seeds and bay leaf.
When fenugreek seeds changes color, add the vegetables along with cauliflower leaves. Sprinkle some turmeric and give it a good stir.
Cook covered over low heat for 10 minutes. Vegetables will release water and they will get cooked in their own water. After 10 minutes, remove the lid and add the ginger paste and cumin powder soaked in water.
Mix thoroughly and again cook for 10 minutes over low heat. You may add the ‘bori bhejano jol’ or the water in which you have soaked the fried bori.
When vegetables are cooked through, add the fried bori along with the remaining water in which it was soaked. Add salt as per taste.
Give it a good stir, adjust the seasoning. Things would be mushy because of the brinjal. Sprinkle chopped coriander leaves and green chili.
Serve with plain rice.
