Chicken Malaicurry is a very popular recipe in my household, so much so that, I cooked it multiple times for various pot luck parties and got a huge applause for the same. It is a very easy recipe with minimum ingredients and can be cooked unattended. The original recipe didnot ask for Potato, but, we bengalis love our aloo in meat dishes, and as a result, I have added few pieces in this curry dish too. You may omit the potato part, if you are not very fond of it.
Ingredients for Chicken Malaicurry
- Chicken – 8-10 pieces
- Onion – 2, big
- Ginger paste – 1 tbsp
- Garlic paste – 1 tbsp
- Green chili – 5-6
- Coconut Milk – 1 cup
- Potato – 2, peeled and cubed ( optional)
- Salt, Turmeric, Red chili powder – as required
- Whole garam masala and bayleaf for tempering
- Ghee – 2 tsp
- White oil for cooking
How to make Chicken Malaicurry
Make a paste of onion, garlic, ginger and green chili and keep aside.
Heat oil and ghee in a pan, and add bayleaf and whole garam masala as a tempering.
Add the masala paste prepared earlier and fry till the raw smell is gone.
Add salt, turmeric powder and red chili powder too.
This is how it looks like when masala is fried well.
Add chicken pieces and mix well so that the pieces are well coated with masala.
I have added the potato pieces as well.
Keep cooking over low heat with the lid on.
Cook for 15 minutes. Chicken will release water and the meat and potato will get cooked in its own water.
Wait till the water dries up. Pour a cup of hot water to cook the the chicken.
Now add a cup of coconut milk and mix well.
Stir to incorporate and then adjust the seasoning. Sprinkle some garam masala powder and a spoonful of ghee at the end.
You may adjust the amount of water depending on your gravy requirement.
Serve hot with Luchi or paratha.
