Diwali season is here and so are the season for khatti mitti snacks. And nothing beats a good old doi bora or Dahi Bora as you call it. No, this is not something you eat on the haldiram shops. It is very much bengali in its own way and I have used some very basic spices to it. Served it cold to my friends who came to visit during dewali.
Ingredients for Ghoroya Doi Bora
- Curd – 1 cup
- Beuli Dal or Urad Dal – 1 cup
- Ginger paste – 1 tbsp
- Green chili – 2
- Roasted masala – 1 tsp
- Roasted chili – 1 tsp
- Rock Salt – as per taste
- Sugar – 1 tsp
- Tamarind chutney – as per choice
- Coriander leaves – chopped
- Roasted jeera powder or cumin powder – as required
How to make Ghoroya Doi Bora
Wash the dal repeatedly till the water comes clear. Soak the dal in plain water overnight.
Next morning, drain the water and grind the dal with green chili and ginger paste.
Beat it well till it becomes fluffy. Add half tsp of salt and beat again. Fry the bora or lentil dumplings in hot oil.
Fry till golden brown. Strain from oil and put in a bowl full of water.
Soak all the boras in this water. I have also added a pinch of slat to the water.
Take the curd along with chili powder, rock salt, sugar, amchur powder and roasted masala powder. Mix well.
To serve, take 4-5 boras in a plate, Now add 2-3 tbsp of masala curd to it.
I have used readymade tamarind date chutney. You may add home made one too.
Sprinkle roasted jeera powder and garnish with chopped coriander leaves. Serve cold.
