There would always be few dishes which you like to have more frequently but due to various reasons, you are not supposed to have them specially the guilt dishes. One of such dish for us is ‘chorbi r bora’. Now for bengali, chorbi translates to mutton fat that we get when we buy mutton from our favorite shop. We cook the mutton as per our likings and for the health reason, we remove the fat from mutton and discard. But during this puja holidays, I have preserved those fats and indulged myself to make some chorbi r bora.
While we can make the chorbi r bora of its own, for this version, I have mixed some ground musur dal or red lentils with the fat and made Musur dal diye Chorbi r Bora. Had this with hot rice and it was really awesome.
Ingredients for Musur dal diye Chorbi r Bora
- Mutton fat – 200 gms
- Musur dal or red lentil – a small bowl
- Onion – 2, chopped
- Garlic – 1 tbsp
- Salt, Turmeric
- Green chili – 6-7 or more
- Fresh coriander leaves – a bunch
- Rice atta / flour- 2 tbsp
- Mustard oil for frying
How to make Musur dal diye Chorbi r Bora
Cut the mutton fat into bite sized pieces.
Marinate the fat pieces with salt and turmeric. Keep aside.
Soak the red lentils for atleast an hour and then grind them with garlic and green chilies.
Add the chopped onion, salt, turmeric and rice flour and mix well. Keep aside for 30 minutes.
Since it tastes best when served hot, start frying the bora or fritters when you are ready to serve. Mix the fat pieces with the ground lentil, add chopped coriander and then heat some oil in a pan.
Release a bit of ground dal to check the temperature , if it starts sizzling the oil is ready.
Take a spoonful of batter with atleast one piece of fat and release in oil. Keep the heat at high when releasing the fritters, and then lower the temperature to medium.
Fry them in batches by turning here and there till they are nicely browned from all sides.
Remove from oil and keep aside. Do it for all and serve hot with plain rice and some more green chili.
