You remember that Prawn cutlet recipe posted in my blog? There I have mentioned you not to discard the prawn heads , remember? This recipe is taking care of those prawn heads or chingri machh er matha to give you a yummy, delicious and satisfying bharta recipe and that is Chingri machh er matha bata / bharta. Just boil those prawn heads, fry with some masala, make a paste out of it and they refry with seasoning and you are ready to present another dish. Easy, and an example of utilising every bit of prawns.
A note of caution here. The prawn heads must be fresh and cleaned meticulously to avoid any food poisoning. Also, have it in a little quantity to enjoy the taste.
Ingredients for Chingri machh er matha bata / bharta
- Prawn heads – 8-10
- Onion – 1, big
- Tomato – 2, chopped
- Green chili 4-5 or as per taste
- Garlic – 1 tbsp
- Salt, Turmeric
- Mustard oil for cooking
- Coriander leaves for garnishing
- Kalo jire or kalonji seeds for tempering
How to make Chingri machh er matha bata / bharta
I have steamed the prawn heads a bit first and then discarded the water. Place a pan on to the gas and then heat 1 tbsp of mustard oil. Add chopped onion and the steamed prawn heads along with some salt and turmeric. Fry for 3-4 minutes.
Add the chopped tomato and green chili and fry till the tomato is mashed.
Removed from heat and cool it completely.
Grind the mixture in a mixer grinder and make a paste out of it. I have added the garlic here. You may add the garlic during frying the mixture as well.
In the same pan, add some more mustard oil and when it is hot, add the kalonji seeds. Wait for 30 seconds and then add the ground mixture.
Fry over medium to low heat till the water evaporates completely. Adjust the salt as per your taste.
Add chopped coriander leaves and remove from heat.
Serve with plain rice.
