Prepared this quitential bengali dish Patol or Patal Posto for the last time this season before patal or parwal disappears from the market. Now, no introduction is required for this dish which is ever popular in Bengal, and why not, it has Patal and it has posto, another popular ingredient from bengal. I have prepared patol in various ways, and this one is the most basic and loved by all.
Presenting this as part of my october blog marathon. I must complete this challenge as you all know. Sometimes it is required to challenge the self to complete a target and I am already created one 101 things in 1001 days list. It is a struggle to cook and write and publish one recipe a day but I am enjoying the process.
Ingredients for Patal Posto
- Parwal or Patol – 1 kg, washed and peeled as shown in the picture.
- Green chili – 5 – 6
- Posto or poppyseed paste – 3 tbsp
- Ginger paste – 2 tsp
- Bay leaf – 1
- Green cardamom – 2-3 pr cardamom powder – 1/2 tsp
- Milk – 3 tbsp
- Salt and Chili powder – as per taste
- Kashmiri chili powder – 1/2 tsp
- Lemon juice – 1 tsp
- Sugar – 1 tsp
- White oil – 2 tbsp
- Ghee – 2 tsp
How to make Patal Posto
Peel the parwal or patol the way it is shown here. Slit both ends. Now steam the parwal along with salt, green chili, green cardamom and bay leaf till almost cooked.
I steamed it in microwave in half cup of water. This is how it looks like.
Add white oil and 1 tsp of ghee in a pan. When it is hot, add the ginger paste followed by poppy seed paste. Fry till it releases nice aroma. Then add the milk and fry well.
Add the steamed parwal along with the remaining water. Mix well with the masala.
Add salt and sugar as per the taste and cook till the gravy thickens and parwals are completely cooked.
My dish is almost ready.
Sprinkle the chili powder and kashmiri chili powder. Mix well .
Remove from heat. Adjust the seasoning if required.
Add the remaining ghee and mix well.
When it is a bit cool, add lemon juice.
Serve with luchi, roti or paratha. Can be served with rice too.
