A very basic recipe of patal bata or patol bharta which is a regular in my kitchen, We can have a plateful of rice with this no fuss dish. Of course I have various other ways to cook patal bata, for example, bhaja patol er bharta or Gandharaj lebu diye patal bharta. However, this one is the simplest one.

Ingredients for Patal Bata or Patol Bharta
- Patol or parwal – 8 -9
- Garlic – 1 tbsp, more, if you like more
- Green chili – 4 or more
- Turmeric – a pinch , can be omitted
- Kalojire – a pinch
- Mustard oil
- Dry red chili – 1
How to make Patal Bata or Patol Bharta
Roughly chop the patol or parwal after washing it thoroughly. You may or maynot peel it.
Grind the chopped patol in a mixer grinder . I do it in batches.
Add the garlic and green chili as well while grinding the patol. Make a smooth paste.
In a flat pan, heat mustard oil and then add kalonji seeds or kalojire.
Pour the ground patal or patol bata to the pan. Add salt and turmeric.
Mix and cook covered over medium heat for 10- 12 minutes.
When the water evaporates completely, give it a good stir and cook for few more minutes till the oil starts coming out of the mash. Adjust the seasoning. I have fried the dry red chili in oil and added it after mashing to the dish as a final touch. If you are not too kin on the heat quotient, you can omit this step.
Serve with hot rice. You may sprinkle a spoonful of mustard oil at the end.
Another variation of patal bharta is this bhaja patal er bharta, which is equally delicious.
