I have cooked this ladies finger prawn curry out of sheer disappointment since I don’t like ladies finger at all. But hubby is just opposite, he loves his ‘dhyarosh’ and buy it in every visit to vegetable shopping during summer without fail. Bored of frying the ladies finger, decided something new and added prawn with some mustard paste in to this. I am pleasantly surprised that after it is this, I have actually started loving this vegetable. Let me tell you how I have cooked this.
Ingredients for ladies finger prawn curry
- Ladies Finger – 500 gms
- Small prawns – 100 gms
- Onion – 1, chopped
- Ginger Garlic paste – 1 tbsp
- Mustard paste with green chili – 2 tbsp
- Curd – 1 tbsp
- Mustard oil
- Salt, Turmeric, Red chili powder – as required
- Kalo jire or Nigella seeds – a pinch.
- Sugar – 1/2 tsp
Method to cook ladies finger prawn curry
To start with, I have soaked the ladies finger in water for 30 minutes after washing it thoroughly. Then remove from water and chop it into 2 inch pieces after discarding the top and bottom part of it. I have also cleaned the prawn and marinate them in little salt and turmeric.
To make the mustard paste, while you can use the store bought mustard powder, I have taken mustard seeds, soaked them in water and then grind it to a paste with a pinch of salt, I have also added some green chili and a spoonful of crd while grinding and made a homogeneous paste.
In a pan, heat mustard oil and fry the marinated prawns lightly. Remove from the pan and keep aside.
In the same pan, add some kalo jire or nigella seeds.
When it splutters, add the chopped onion and from till translucent.
Add the ginger garlic paste and fry till the raw smell is gone.
Next add the chopped ladies finger with pinch of salt, turmeric and red chili powder. Mix well with the masala.
Cook covered till the vegetable is soft. Then add the mustard curd paste and mix well.
Cook for 5 minutes over low heat till the vegetable is cooked through. Now add the fried prawns and mix.
Cook for 2 minutes and you are done, Adjust the seasoning. I always add a pinch of sugar in my vegetable dish to enhance the taste. However, it is purely optional.
Serve hot with rice or roti.
