Enjoy this comforting Pepe kachkola bori diye sukto on a hot summer day and you will fill that Life is good !! I heard from somebody that Sukto is an acquired taste, may be that is true. I also had this impression that Sukto must have some bitter vegetable / element in it. Ok, now this sukto, which used to happen at my maternal place doesnot have any bitter veggie in it, but yes, it has mustard paste, which is taking care of the bitter element I think. Damn,, let’s forget the blubbery and jump into the recipe.
Ingredients required for Pepe kachkola bori diye sukto
- Kachkola or raw or green banana – 3
- Potato – 1
- Pepe or green papaya – half
- Bori or Bengali dried lentil balls – 15 – 20
- Ginger paste – 1 heaped tbsp
- Mustard paste – 1 tbsp
- Desiccated coconut – 2 tbsp
- Milk – half cup
- Panchforon or bengali five spice – 1 tsp
- Bay leaf – 2
- Salt, Turmeric ( a pinch)
- Sugar – 2 tsp
- Ghee – 1 tbsp
- Mustard oil
How to make Pepe kachkola bori diye sukto
Peel the green banana and raw papaya and slice them. Steam them a bit. I did it in microwave for 2 minutes. Slice the Potatoes too.
In a pan, heat oil and fry the bori till brown. Keep aside.
In the same pan, add bay leaf and panch foron and let it splutter.
Add the vegetable with salt and a pinch of turmeric and stir for 2 minutes over medium heat.
Then add the coconut and mix well.
Pour the milk and stir quickly.
Now is the time to pour some water. We like the sukto a bit rosha rosha, hence added a cup of water. Stir and then let it get cooked for some time till the vegetables are soft.
You have to add the fried bori at this stage. Please remember that the bori will soak some water. Add the ginger paste and sorshe bata or mustard paste and mix well.
I prefer not to cook the dish too much after adding the mustard paste, so gave it a nice stir and then I have added the sugar, The taste of the dish would be mildly bitter sweet, so adjust the seasoning. Check the salt too.
Switch off and add a dollop of ghee . I have used my home made ghee here.
Give it a good stir and you are done.
Serve with plain rice.
