How to make Kerala Pomfret Curry
Heat oil in a pan, Smear the fish with salt and turmeric powder and fry lightly in oil. Keep aside.
In a fresh pan, heat oil. Add mustard seeds and let it splutter.
Add the onion, green chilli , chopped garlic, ginger paste and curry leaves and saute for 5 minutes.
The onion will become transparent in the process.
Add salt, turmeric powder and red chilli powder with a sprinkle of water and fry the masala, Stir to avoid burning. I have used kashmiri chilli powder here.
When the rawness of the masala is gone, add chopped tomatoes and fry well till the tomatoes are really mushy.
Pour in one cup of coconut milk that have been prepared form Maggi coconut powder. I always remove the pan from heat before adding the coconut milk to avoid curdling. Mix thoroughly with the masala and put it back to heat.
Once the gravy starts boiling, add the fried fish and stir carefully . You may need to add half cup of warm water.
Simmer for about 10-12 minutes over medium heat till the fish is done. Adjust the seasoning. Serve hot with plain rice.
I have some more pomfret dishes to try out. I would be happy to hear from you. Happy cooking !!
