Patal Bharta has become a staple in my household during summer, either the peels or the whole patal or parwal or pointed gourd is being mashed followed by frying in oil. My son loves patal er bharta and never get tired having it. But the food enthusiastic soul in me started thinking of regular patal bharta being boring,
Now, few days back, I was making simple patal bhaja and while doing so, it came to my mind to mash it and refry to give a twist to the patal er bharta and this dish is born.
By the way, my son welcomed the change, another proof that he is my son.
- Patal / Parwal – 8 – 10
- Onion – 1, thinly sliced
- Green chilli – 3-4, as per taste
- Salt, Turmeric
- Sugar – optional
- Mustard oil – 3 – 4 tbsp
- Kalonji seeds – a pinch
How to make Bhaja Patal er Bharta
Chop the parwal roughly after removing the sides. Donot peel it, Bharta tastes best with the peel.
Fry the chopped parwal with a pinch of salt and turmeric in mustard oil. I had some peels stored in my fridge , so added them too.
Fry them till they turn brown. cool it and then place the fried parwal in the grinder with green chilli. Make a mash of them.
In the same pan where the parwals were fried, add some more oil. Then after adding a pinch of kalonji seeds, add chopped onion and give it a stir, Fry for a minute or two and then add the ground parwal and green chilli. Stir quickly to mix.
Cook covered over low heat for 15 minutes. I usually keep the heat on the very lower side.There would be splashes till the water evaporates, so be cautious and keep it covered.
stir occasionally and keep cooking over low heat till all the water evaporates and oil starts coming out.
adjust the salt and if you are using sugar, add it at this stage. Let the sugar melts and then give it a final stir.
Serve with plain rice and some more green chilli.
