This beguni or bengali brinjal fritters with sesame seed is an outcome of cleaning up of my pantry shelves. During the action, found some roasted sesame seeds sitting on the corner of the shelves and decided to make use of it. Added them into the batter that was kept ready for fermentation. The result is a nice crispy beguni or brinjal fritters which can be served as part of regular meal or as a snack with tea or coffee.
I have also used a pinch of baking soda in the batter just before frying and that also has imparted a crunch to the fritters.
Ingredients for Crispy Beguni:
- Brinjal – 1 big, sliced thinly
- Gram Flour – 3 tbsp
- Rice flour – 3 tbsp
- Salt and Turmeric
- Red Chilli powder
- Roasted Sesame seeds – 1 tbsp
- Kalo Jire / Nigella seeds – a pinch
- Baking soda – a pinch
- Oil for frying
How to make Crispy Beguni
Add salt and turmeric to the brinjal slices and keep aside.
Mix Gram flour, rice flour, salt, turmeric, red chilli powder and roasted sesame seeds. Add enough water to make a batter. The batter should not be too thin. Give it a really good stir and keep aside.
When ready to fry, add the pinch of baking soda and mix.
Heat oil in a pan. Coat individual brinjal slices with the batter and fry over medium heat till browned evenly.
Make sure, you are frying both the sides.
Serve hot as a tea time snack or as a side to your regular dal bhat.
