This Corona and consequent lockdown period taught us so many things including the best possible use of available resources. Husband could manage some green jackfruit from the market and being a bong, the first thing that comes to the mind is ‘Enchor Chingri’ . But Alas, I didnot have any prawns in my fridge. So added soya chunks as a protein source and voila, Green Jackfruit Soya curry is born. When I was serving this to my family during lunch, I really missed my grandma, who was a vegetarian. This vegetarian version of green jackfruit soya curry would have been a very welcome dish for her to relish.
Ingredients for green jackfruit soya curry:
- Green Jackfruit – 500 gms, peeled and cubed
- Potato – 2, peeled and cubed
- Soya Chunks – 1 cup, soaked in water
- Onion – 1 , chopped
- Onion paste – 2 tbsp
- Ginger paste – 1 tbsp
- Garlic paste – 1 tbsp
- Bayleaf, red chiili, cumin seeds for tempering
- Cumin powder, Coriander powder – 1 tsp each
- Salt, Turmeric, red chilli powder
- Sugar – 1/2 tsp
- Garam Masala powder
- Mustard Oil
How to make green jackfruit soya curry:
Steam or boil the jackfruit cubes with a pinch of salt till soft. Keep aside. Fry the potato cubes with a pinch of salt and turmeric and keep aside. In a pan, heat oil, then add cumin seeds, bayleaf and broken red chilli. Fry a little and then add the chopped onions. Fry till golden brown.
Add the onion, garlic and ginger paste and fry till the raw smell is gone.
Add the masala powders like turmeric, cumin and coriander powder. Also add the red chilli powder . Spinkle a bit of water and fry the masala well.
Next add the boiled green jackfruit and mix well with the masalas. Keep stiring for 3-4 minutes.
Add 2 cups of hot water and mix well. Add the potato cubes too.
When the gravy starts boiling, add the soaked soya chunks and mix well.
Cook covered till the vegetables are well cooked and gravy thickens to your liking. Adjust the seasoning. When vegetables are thoroughly cooked, add the sugar and mix well. Remove from heat and spinkle some garam masala powder. Keep covered for 15 minutes standing time. Serve hot with rice or roti.
