Cheesy Prawn Tart

This lovely Cheesy Prawn Tart treat is the outcome of my attending the 1st ever baking workshop in my life organised by very talented Sayantani who blogs from home makers diary. I loved the way she taught us the preparation of the dough required for Cheesy Prawn Tart, the patience we need to slow cook the filling and then carefully bake the tart shell or case to perfection and finally load the Cheesy Prawn Tart with cheese spinach filling loaded with extra cheese.

When I have shared the images with my son, he immediately complained about making all these goodies in his absence. By the way, did I ever mention that he is a self taught baker and baking was his favorite pastime during his study leave. I am planning to make this again soon but that time with a different filling. Cheesy Prawn Tart

Ingredients for the Cheesy Prawn Tart:

For the shell or tart case:

  • Flour – 1 and 1/2 cup
  • Chilled Butter – 100 gm
  • Ice water – 3 – 4 tbsp
  • Salt – 1/3 tsp
  • Pepper – 1/2 tsp

For the fillings:

  • Prawns – 1/2 cup
  • Spinach – 1 cup, chopped
  • French beans – 1/2 cup, chopped
  • Onion – 1, chopped
  • Garlic paste – 1 tsp
  • Butter – 1 tbsp
  • Flour – 1 tbsp
  • Milk – 3/4 cup
  • Processed cheese – 1/4 cup – shredded
  • Salt, pepper powder, chilli flakes
  • Some seasoning of your choice

How to make Cheesy Prawn Tart:

Mix the flour, salt and pepper powder.

Cut the butter in small cubes and using a fork start crumbling the butter.

When the flour starts looking like wet sand, add in 1 tbsp of ice water. Try to bring it together. If it still looks craggy, add one more tbsp of water and mix. Bring in the dough to a rough ball and wrap with plastic wrap and keep in the refrigerator for 30 minutes.

Now start making the filling. Heat the butter in a pan, Add garlic paste and fry over very low heat till you get the nice aroma of garlic.

Add the onion and saute.

Add the spinach along with prawn and beans and mix well.

Cook with salt and after 2 minutes, add the flavorings. Cook till the water is absorbed completely and the vegetables are cooked.

Next, add 1 tsp of butter at the centre and sprinkle the flour on top. Mix so that the flour is toasted in butter . Now lower the flame to the minimum and pour in the room temperature milk. Mix well and cook on low flame till the sauce thickens.

Mix in the grated cheese and cook till the cheese melts. Take out of heat and let it cool.

This is how the filling will look like.

Now to make the tart, preheat the oven at 175 degree C. Roll out the dough between two pieces of butter paper or cling film with flour.

Cut small circles and line the tart cases. I prefer to have my tart case thinner, hence rolled out the dough accordingly. With a fork, prick the tart cases. Place some rajma or kidney beans inside to avoid puffiness of the tart case.

Bake for 10 minutes till the crust looks golden.

Take out from oven and remove the beans.

Brush the inside with beaten egg. Pour in the filling. Top with some more grated cheese and chilli flakes or hot seasoning.

Bake for 10-15 minutes till the cheese melts and starts oozing . Serve warm.
