A very tasty and quick recipe which is my savior in number of instances. Not a full fledged recipe at all, just whatever masala available to you, stir fry boiled and sliced egg and potato with those masalas and thats it. Try it with your rice and dal or have it as part of a filling to indian style roti roll or even use it as a sandwich filling. It will never disappoint you.
- Eggs – 3
- Potatoes – 3-4
- Onion – 1, finely chopped
- Green chilli – as per taste, sliced
- Tomato – 1, small, chopped
- Turmeric, salt, cumin powder
- White oil for frying
Boil the potatoes and eggs in a pressure cooker.
Let it cool a bit, then peel and slice them.
In a pan, heat the oil. Fry sliced onion and green chilli till translucent.
Add chopped tomato and let it mash.
Add salt, turmeric and cumin powder and give it a good stir. Let the raw smell gone.
Add the sliced potatoes and eggs and fold with the masalas.
Fry for 3-4 minutes stirring occasionally so that the masalas are coated well.
Sprinkle some chopped coriander leaves and serve hot.
