Some quick bite for fish loving bengalis, this is fish amritsari goes well with your regular ‘dal bhat’. Can be served as a snack too, I personally feel that it must be served hot so prepare everything, marinate and keep the batter ready, fry them in batches just before eating.
- Bhetki fillet – cut into cubes – 15- 20 pieces
- Vinegar- 2 tbsp
- Ajwain seeds – 1 tbsp
- Ginger garlic paste – 2 tbsp
- Lemon juice – 1 tbsp
- Gram flour / besan – as required
- Salt, turmeric, chilli powder
- Soda water – 2 tbsp
- Oil for frying

Marinate the fish cubes with vinegar and salt for 30 minutes. This is to reduce the fishy smell of the fish.
Discard the liquid and add salt, turmeric , chilli powder, ginger garlic paste and ajwain seeds. Coat the fish pieces well with the masala.
Then add the gram flour. Mix well. Keep marinated for 30 more minutes.
Heat the oil in a pan. Add the soda water to the fish mixture and coat well.
When the oil is hot, place the coated fish pieces carefully in the hot well. Reduce the heat and fry the fish well by turning occasionally.
When it is evenly brown, increase the heat and give it a quick stir.
Remove from heat using a slotted spoon. Serve after sprinkling some chat masala.
