I have many varieties of curry recipes but never ever tried Cabbage Liver Curry or the liver cooked with cabbage. Few days back, dear friend Moumita came to spend the day with me and I cooked this for her, came out really nice.
Ingredients for Cabbage Liver Curry:
- Mutton liver – 250 gms, cut into small cubes
- Cabbage – 1, small, chopped fine
- Potato 2, medium, peeled and cubed
- Onion – 1, medium, chopped
- Garlic paste – 1 tbsp
- Ginger paste – 1 tsp
- Onion – 1, make a paste
- Coriander powder- 1 tsp
- Cumin powder – 1 tsp
- Salt, turmeric, red chilli powder, sugar
- Tomato – 2, chopped
- Green chilli – as per paste
- Garam masala powder
- Bay leaf, Whole garam masala, whole cumin, dry red chilli
- Mustard oil , ghee
Steam the cabbage and the potato cubes a bit and keep aside.
Heat mustard oil in a pan. Then add the whole garam masala, cumin and dry red chilli. Let it splutter. Add the chopped onion and fry till golden brown. Add ginger garlic paste along with onion paste and fry well.
Add chopped tomatoes with a pinch of salt and let it become a mash.
Then goes the cumin and coriander powder, red chilli powder and turmeric. Fry the masala mix with a splash of salt so that it didn’t burn.
Next add the liver pieces and fry till it gets cooked.
Add the steamed cabbage and potato and mix it with the cooked liver thoroughly . Keep covered and cook for 5 minutes over low heat.
Cabbage might release water, increase the heat and let the water evaporate. Adjust the seasoning. Add the sugar at this point and mix.
When the cabbage starts clinging to the pan, remove from heat and add garam masala powder and ghee. Add the chopped gree chilli too and keep covered for 10 minutes.
Serve with roti or paratha.
