Mixed Chowmein

tomorrow is the starting of mother of all festivals for bengalis – the Durgapuja. Unlimited fun with friends and relatives, adda , pandal hopping and the best part of it is the FOOD. For the next 5 days, we will devour all kinds of good foods and hence I took a break from making an elaborate dinner and settled for this mixed chowmein. Had this sikkimese egg noodles in my pantry. So started by boiling it in a pan of boiling water with some salt and white well and drain the excess water. Thrown in some sausages and prawns along with some veggies. Had one or two packs of some ready made soup mix which I have added too. At the end added two eggs and I am done.

Ingredients:

  • Egg noodles – 200 gms
  • Chicken sausage – 3, chopped
  • Prawns – a handful, shelled and deveined
  • Eggs – 2, beaten with a pinch of salt
  • Onion – 1, roughly chopped
  • Capsicum – 1, roughly chopped
  • Knorr soup – 1 sache,
  • Soya sauce – 1 tbsp
  • Fish sauce – 1 tsp
  • Salt – if required

Method:

Bring a saucepan of water to a boil. Add a spoonful of salt and few drops of oil . Then add the noodles and cook till cooked but firm.

In a pan, add white oil. When it is hot, add chopped garlic and fry well.

Add chopped onion and fey till it starts turning golden brown.

Next add chopped sausages. Fry a little then add the prawns.

Fry till the prawns turn pink. Add chopped capsicum.

After two minutes add the eggs with a pinch of salt. Stir to make the eggs turn into strips.

Mix the soup sachets into two cups of water and add it to the mixed masalas. Stir and cook for 5 minutes over low heat till the soup starts boiling.

Add the fish sauce and soy sauce. And mix. Check the seasoning and adjust accordingly. Since the sauces already have salta, be careful about adding the  salt.

To serve, place the boiled noodles in a bowl.then pour the soup over and enjoy.

Tastes best when hot.
