Poached chicken, ummm,, do you think it is boring? I thought so initially. Was craving for some healthy dish without compromising on taste . A quick search and then run through some of the blogs and saw this recipe. Though I was skeptical at the beginning, but the laziness won and have gone ahead to make this. Astonishingly, this soup help satiate my need. Cooked this dish for Saturday night dinner.
- Chicken – 6 pieces
- Ginger paste – 2 tbsp
- Spring onion – a bunch
- Onion – 1, big, chopped
- Soya sauce – 1 tbsp
- Oil – a spoonful
How to prepare this soup:
To poach the chicken, boil two cups of water with half of the ginger paste, half chopped onion and 2 tsp of chopped spring onion.
When the water starts boiling, carefully place the chicken and let it start boil again.
Now reduce the heat to low and cook covered for 10 minutes. Remove from heat and Let the chicken sit in the water for 15-20 minutes more so that it gets cooked for some more time. Strain from water and keep it aside.
Now remove the chicken meat from the bone and keep in a bowl.
Heat 1 spoon of oil in a wok.fry the remaining onion till it starts changing color.
Add the soya sauce and ginger paste with a pinch of salt and give it a quick stir.
Add the remaining spring onion and a cup of strained liquid.
When it starts boiling, add the boiled chicken meat and give it a good stir .
Adjust the seasoning and remove from heat.
You may add one tsp of ginger juice at the end to make it more gingery.
Garnish with spring onion and serve hot.
