This is a must at my parent’s place specially during summer and I love it. It is kind of a comfort food for me. Coming back to this, while boiling the potato and bitter gourd , I found half of brinjal sitting in the fridge. Rest has been used to make my ‘begun bhaja’ last week. So I fried the remaining pieces and mixed it with other vegetables. Addition of ghee gave it an extra mileage , if I may say so. Let’s jump to the recipe now.
- Potjato – 2
- Bittergourd / karela – 2, small
- Brinjal – half
- Kalojire / kalonji seeds – 1/2 tsp
- Ginger paste – 1/2 tsp
- Ghee – 1 tbsp, you may add some more.
Boil the potatoes and bittergourd with a pinch of salt.
Fry the brinjal till golden brown and keep aside.
Remove the peel of potatoes and mash it along with boiled bittergourd after discarding the seeds.
Heat ghee in a pan, then add kalojire. When it crackles, add the ginger paste and fry well till the raw smell is gone.
Next add the mashed potato, bittergourd and fried brinjal to the pan. Add salt too.
When the mixture starts coming out of the pan, add some more ghee and remove from heat.
Serve with plain rice.
