One more bharta recipe for you all bharta lovers. As I said earlier, bharta is the ultimate comfort food for us, and we make sure to have it as part of our weekend meal atleast once.
So last weekend, it was potato pumpkin bharta for us.
This is how I made it.
- Potato – 2,, cubed
- Pumpkin – cubed, one big bowl
- Garlic paste – 1 tsp
- Chopped garlic – 1 tbsp
- Onion – 2, chopped
- Salt, turmeric, coriander powder, red chilli powder
- Sugar – a pinch
- Green chilli – 2-3, chopped
- Panchforon – bengali five spice – 1 tsp
- Mustard oil – 1 tbsp
Boil the potato and pumkin cube with salt, turmeric, chilli powder, coriander powder, half chopped onion and garlic paste .
Remove from heat and strain the vegetables. You may use the remaining stock for some other purposes.Using the back side of a spoon, break the vegetables a bit.
Add the mustard oil in a pan and when it is hot, add the panchforon.
Let it splutter. Then add chopped pinion and chopped garlic till golden brown. We love bits of garlic in our bharta, if you don’t like it, please omit.
Next goes the boiled potato and pumpkin along with masalas , if any.
Add chopped green chilli at this stage too. Fry over high heat till the vegetables and masalas are mixed well and oil starts coming out.
Sprinkle the sugar . Adjust salt, if required and the dish is ready.
Serve with hot rice.
