A quick salad, that is flavourful in its own term. Not sure how authentic ‘kimchi’ it is, but whatever we get at our local restaurant as kimchi is somewhat similar to it. and we love it. Here is the recipe.
- Cucumber – 1
- Onion – 1/2
- Ginger paste – 1/2 tsp
- Garlic paste – 1/2 tsp
- Red chilli powder – as per taste
- Vinegar – 1 tbsp
- Fish sauce – 1 tbsp
- Water – 1 tbsp
- Sugar – 1 tsp
Cut the cucumber with the peel on into bite size pieces. Sprinkle some salt and keep aside for some time. It will release lot of water.
In a bowl, combinr ginger paste, garlic paste, salt, sugar and red chilli powder. I have used half kashmiri chilli powder and half regular chilli powder to tackle the heat.
Add the vinegar and fish sauce along with sprinkle of water to make a thin spice mix.
Thinly slice the onion. Discard the liquid released from the cucumber. Now add the onion slices with the spice mixture and give it a nice stir.
When everything is well combined, keep covered in the refrigerator. Serve cold as a side.
