Another khichuri recipe which you can make in a jiffy as a weeknight dinner, when you are totally exhausted after a hard day at work or may be not in a mood for cooking. But at the same time you donot disappoint your near and dear ones during dinner time. Just mix rice and dal as per the required proportion , boil it, make a tarka and boil it again and you are done. To cook it even quickly, I sometimes use my pressure cooker too. Though I have used normal egg here, you may use Duck egg as well.
- Gobindabhog rice – 1 cup
- Musur dal – 1/2 cup
- Matar dal – 1/3 cup
- Eggs – 2
- Bayleaf, Dry red chilli – 2
- Onion – 2 , chopped
- Ginger garlic paste – 1 tbsp
- Green chilli – as per taste
- Salt, turmeric, cumin powder
- Mustard oil
- Coriander leaves
Wash and mix the rice and two types of dal or lentil. Soak the mixture in water for 30 minutes.
Pressure cook the rice and dal mixture with salt, turmeric and cumin powder for 3 whistles. Let it release the steam of its own.
Beat the eggs with chopped onion and salt. Make a big omlette. Cut the omlette into three parts. Scramble one part and keep two parts intact.
In a deep pan, add mustard oil and when it is hot, add the dry red chilli.
After 30 seconds, add the chopped onion and fry till golden brown. Next goes the ginger garlic paste and fry well till the raw smell is gone.
Add the boild rice lentil mixture into the pan. You may need to add some extra water for the desired consistency. Mix well with masalas and let it boil for 5 minutes.
Adjust the seasoning and mix chopped coriander leaves and green chilli. Mix well.
Now add the omlette and cook for 3 more minutes. Don’t stir much after adding the eggs, otherwise it will break.
Remove from heat and serve with your choice of fritters. You may add a dollop of ghee or butter just before serving.
