Shaag Mutton with Cauliflower

Ah,, so it was my hubby’s birthday and we all know how much he loves his mutton. But me being a good wife, always try to sneak in some vegetables into his diet and hence this dish, that is shaag mutton with gobi or mutton cooked with spinach and cauliflower. This big chunk of cauliflower brings a nice change in taste of the dish and I have used it to replace the potato ( something on the healthier side, you know !!! ). I have served it with both roti and rice but it tastes best with roti or chapati !!


  • Mutton – 500 gm
  • Cauliflower 1, medium, cut into florets
  • spinach – a bunch
  • onion – 3
  • ginger – 1 inch
  • garlic -6-8
  • Salt, sugar, turmeric, red chilli powder
  • mustard oil
  • whole dry red chili
  • whole garam masala


make a paste of onion, ginger, garlic . Marinate the mutton pieces with ground masalas and salt, turmeric, red chilli powdrr for 2 hours.

Steam the spinach and make a puree out of it. Keep aside.

in a pan, add mustard oil. When it is hot, add the whole red chilli and whole garam masala. Let it crackle.

When the masalas are fried, add the marinated mutton. And give it a quick  stir.

Simmer for 10-15 minutes over medium heat with a stir here and there to ensure that the masalas are not burnt. When masalas are fried and oil starts coming out of the masalas, add the spinach puree.

Stir thoroughly and keep cooking till the spinach paste changes color and oil starts oozing out of the masalas. Next add the cauliflower pieces and keep cooking. Add hot water as per your desired gravy consistency. Check for the seasoning too.

If you can slow cook the whole mix over a cook top, nothing like ut but I prefer to pressure cook the meat at this point to shorten the cooking time. To do this, I have removed the cauliflower and put everything In the pressure cooker and cook for 5-6 whistles. Once the meat is cooked, transfer the whole lot into the pan , mix the cauliflower and complete the cooking once the caukiflower is thoroughly cooked. Add garam masala powder and tou are done. Goes best with chapati .
