This dish is prepared accidentally as part of one quick week night dinner when I had nothing in my fridge except 2 brinjals and some potatoes, found half tomato and one onion and some humble green chillies too. So what I did was just boiled the potatoes, fried the brinjal and a quick mixing with some masalas and I am done. I just need to buy some chapaties to go with it.
- Potatoes – 2, peeled and boiled
- Brinjal – 2, cut into half
- Onion – 1, chopped
- Tomato – 1, chopped
- Green chilli – as per taste
- Salt, sugar- a pinch
Since I have already boiled the potatoes, what I did was heat the pan with some oil and fried the brinjals with salt and turmeric.
In the same oil add all t he chopped masalas like onion, green chilli, tomatoes with a pinch of salt and fry quickly.
Now add the mashed potatoes and give it a good mix.
Next goes your fried brinjals. Now, how long will you keep stirring that depends on kind of texture you like of your dish. I prefer a total mishmash of both the ingredients so I cooked it for some time till the potatoes and brinjals are blended nicely.
Once the mash is nicely fried and the water evaporates, adjust the seasoning. The dish is ready. You may add some chopped coriander leaves for extra flavour.
Goes best with roti.
