Peas Kachuri or Karaishuti r Kachuri | Matarshuti r Kachuri

Peas Kachuri or Karaishuti r Kachuri is a very famous Bengali breakfast especially during winters. What is better than spicy green peas stuffed inside crispy kachuri / kachori and served with aloo dum. Please donot confuse it with peas paratha, which is kind of a flatbread cooked over a tawa with little oil This version of flatbread is a deep fried one with some filling inside. 
You can prepare the stuffing in various ways. Sharing with you two kind of stuffing.

Ingredients for Peas Kachuri or Karaishuti r Kachuri

Type 1:

  • Fresh Peas – 1 kg,
  • Black pepper – 10 gms
  • Refined Flour – 500 gms
  • kalonji seeds – 1 tsp
  • Salt and Sugar – As per taste
  • Oil – For frying

Type 2:

  • Fresh Peas – 1 bowl
  • Black pepper – 1 tsp
  • Refined Flour – 500 gms
  • Ginger paste – 1 tbsp
  • Green chili paste – 2 chilies
  • Cumin powder – 1 tsp
  • Hing – a pinch
  • Salt – As per taste
  • Oil – For frying,
  • 1 tsp of ghee to knead the flour

 

How to make Peas Kachuri or Karaishuti r Kachuri

Shell and boil the peas with little salt. Mash it in a blender with black peppers. for Type 2, mash it with ginger and green chili.

Put oil in a frying pan. When it is hot, add the kalonji seeds. When it splutters, pour the mashed peas and fry continuously. For type 2, put some hing in the oil and then add cumin powder, salt and the paste to make it a lump. 

Fry well till the water evaporates. This is your stuffing.

Add salt and sugar in maida. Add a spoonful of ghee and then add water and knead it well. Keep it aside for sometime with a cloth on top of it.

Take small portion of the dough and shape it like a cup. Put some of the stuffing into it. Close neatly so that the stuffing doesn’t come out of it.

make the number of balls required.

Now flatten the stuffed ball using pin. Be cautious, the stuffing should not come out of the kachori.

Heat sufficient oil in a kadai thoroughly. Now add the kachori into it and deep fry till golden brown.

Serve with aloo dum and pickle.
